We present a simplified interpretation of a cocktail featured on the seasonal cocktail list. This is a party-sized prepared mix that's bursting with the flavours of the Christmas time, making it perfect for your holiday party. Reserve the remaining cordial to use in brunch beverages, puddings, or to make more rounds of bikinis.
Bikini Recipe
Serves 10 guests
For the Citrus Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
To make the Cocktail (produces 850ml, enough for 10)
400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish
Method
Making the Syrup: Combine every components in a saucepan, bring to a gentle boil, stirring until the sugar dissolves. Then, take off the stove and leave to reach room temperature completely. Pour to a clean bottle, seal and store in the fridge, where it will keep for about a month.
To make Batch Mix: Mix the specified liquid ingredients into a big jug, allow it to infuse for an hour, then strain preferably using muslin, to ensure it's completely strained.
When ready to serve: Measure 85ml of your batch mix to a stirring glass containing ice, and stir carefully for a minute to cool it down. Pour into an cold coupe glass or a similar vessel, top with the cranberries and complete it by giving it a light spray of the essential oil over the top.
